Juice Baby is an adorable juice bar nestled in the heart of Chelsea on Kings Road, although given its fresh, modern interior and laid-back vibe, it could easily be found on the boardwalks of California. This is my go-to place to grab a quick juice, but they also have an incredible selection of fresh smoothies, raw desserts and salads, that you can either take out or eat-in.
The first time I went with my good friend Emily, we both enjoyed the “Glow Bowl”, which is a delicious concoction of herby quinoa, parsley, coriander, mint, steamed sweet potato, steamed kale, roasted courgette and spring onions, all topped with a turmeric mustard dressing.
This dressing is one that I have since tried to emulate in my own salads, as it creates a lovely creamy consistency much like that of French dressing, but without all the extra fat and calories.
We also both had the Sweet Green cold pressed juice, which was a heavenly blend of Pineapple, Cucumber, Celery, Leafy Greens and Lemon. I tend to always try and go for the juices that have more vegetables in them as opposed to just fruit, as I find it easy to eat enough fruit throughout the day without having to drink it!
My favourite lunch dish has to be the “Taco Bowl” though, which consists of steamed quinoa, cos lettuce, walnut taco mix, Pico de gallo, guacamole, sour cashew cream and chilli.The blend of flavours is honestly incredible and it’s hard to believe that it’s made without any meat or dairy!
Although I don’t follow a vegetarian or vegan diet, I do find it inspiring to see the delicious ways that meals can be created without the conventional ingredients often associated with them. I myself often try to think up healthy alternative to classic meals, such as my most recent recipe of a a healthy Spaghetti Bolognese, and previously a healthy Shepherd’s Pie and Peanut Butter and ‘Jelly’ Oats.
